Cheese Ball

1 8 ounce cream cheese (at room temperature), 1 8 ounce package shredded cheese, 2 tablespoons diced onion, 2 tablespoon diced green pepper, 2 tablespoon pimento, 1 small can crushed pineapple ( drained and laid out on paper towel to drain more), 1 package crushed pecans.

Directions: Mix well all together except pecans. Form to medium balls and roll in pecans. Refrigerate for about 2 hours. Spread on desired cracker.. Kelly Hill, Success Chapter #87

Healthy Salsa

1 - 14.5 ounce canned Petite Cut Tomatoes, 1- small red onion, 1- jalapeno pepper (optional), 1/2 bunch cilantro, 2- tablespoons fresh squeezed lime juice, 2- tablespoon fresh squeezed lemon juice, 2- tablespoons extra virgin olive oil.

Directions: Pour your tomatoes in a drainer and run under cool water. Kind of stir around with your hand so they get washed good. Slice your onions cross way with the eye facing up to about 1/4 inch thick or less. Then chop those about 1/4 or less. Pull off the cilantro leaves on the stem and place in food processor or chop fine with knife. Where gloves when chopping the pepper so juice don't get on you. Cut the ends off pepper and slice down center long ways. Scrape out all the seeds and rinse pepper good. Now you can chop with knife to make small pieces or place in food processor. Mix all of above ingredients together. Now squeeze about a half or so of a lemon and lime. Which should give you about 2 tablespoons of both. It all depends on the size of your lemon and lime. Mix the juices with olive oil and pour over the other ingredients. Mix all together really well and place in refrigerator with some kind of covering over your bowl. Summer Sausage

2 pounds ground deer meat, 1 pound ground beef, 1 cup water, 1 1/2 teaspoon liquid smoke, 2 tablespoon Morton Tender Quick salt, 1/8 teaspoon garlic powder, 1/4 teaspoon onion powder, 1 tablespoon pepper, 1 teaspoon mustard seed, pinch salt.

Directions: Mix all together. Refrigerate over night. Form into logs, Wrap in foil. Put in broiler pan and bake in oven 1 1/4 hours at 325 degrees. Punch holes in top of foil. Will keep in refrigerator or can be frozen.. Bessie Peterson, Success Chapter #87
