Main Dishes

Authentic Italian Meatballs

1 Pound Mild Italian Sausage, 1 Pound ground Veal, 1 Pound ground Beef, 2 Cups fresh grated Romano Cheese, 1 Bunch of Italian Parsley minced, 1/4 Cup of minced Garlic, 2 Tbs. fresh ground Pepper, 4 Large Eggs, 1 1/2 Cup fresh ground Breadcrumbs.

Direction: Combine all ingredients together until mixed together good. If to dry add a little cold water. It should be moist but not wet.
Take a ice cream scooper and scoop in meat mixer. Round off
meatball in your hand. Should make approximately round 25 meatballs. Preheat oven to 300 degrees. Bake on cookie sheet for 30 minutes. After you remove your meatballs from oven place them in your Marinara sauce. Simmer for about 30 minutes in sauce. I like Barilla Marinara sauce, but you can use your favorite Marinara sauce. Meatballs can also be frozen but must cook in oven as above. Then cool and put in freezer bags and freeze. When ready to eat no need to thaw just drop in Marinara and simmer as above...... Kelly Hill, Success Chapter #87

Bacon, Tomato and Gravy Sandwich

4 tablespoons bacon drippings or shortening, 4 tablespoons flour, 2 1/2 to 3 cups milk, Salt and Pepper, 1 to 2 tomatoes, 4 strips of cooked bacon, 6 to 8 slices of bread.

Directions: Place skillet over medium heat and cook bacon to your crispy. Remove bacon and crumble up, set aside. Take bacon drippings and heat almost to the smoking point. Add flour and stir until it has browned some. Gradually add milk and cook, stirring constantly, until gravy has thickened to a creamy consistency. Add salt and pepper to taste. Makes about 2 cups gravy. Slice tomatoes cross way to your desired thickness. Lay 1 slice of bread on plate, 1 slice of tomato on bread, pour gravy over tomato and bread. Top with bacon crumbs. Crunchy Onion Chicken

2 cups French Fried Onions, 2 tablespoons flour, 4 boneless chicken breast and 1 egg beaten.

Directions: Crust Mix: French Fried Onions with flour in a plastic bag. Dip chicken into egg, then coat in onion crumbs. Bake 20 minutes at 400 degrees until cooked through. Claudette Miller, Success Chapter #87.

Ginny Longaberger's Sloppy Joes

1 lb. ground beef, 1/2 cup catsup, 1/4 cup water, 1T. sugar, 1T vinegar, 1/2 tsp chili powder, salt and pepper.

Directions: Brown ground beef. Add sauce of catsup, water, sugar, vinegar, chili powder, salt and pepper. Simmer for 1 hr... Ruby Noe, Success Chapter #87

Indoor or Outdoor Trailside Beans

1/2 pound bacon, sliced in small pieces, 1/2 pound ground beef, 1/2 diced onion, 1 diced red pepper, 1 diced green pepper, 2-33 ounce cans pork and beans, 1/2 cup brown sugar, 1/4 cup of Worcestershire sauce, 2 tablespoons of white vinegar.

Indoor Directions: Cook bacon, ground beef until done. Add onion and red and green pepper to meats and sauté until onions and peppers are soft. Drain off excess oil. Add pork and beans, brown sugar, Worcestershire sauce, and white vinegar. Stir well, pour in a baking dish, and bake at 350 degrees for about 1 hour.

Outdoor Direction: Cook bacon, ground beef well in a 12 inch Dutch oven. Use 24 coals all on the bottom to start, then separate and place the coals as noted earlier during the baking stage. Before removing excess oil add onion and red and green pepper to meats and sauté until onions and peppers are soft. Drain off excess oil. Add pork and beans, brown sugar, Worcestershire sauce, and white vinegar. Stir well, place lid on oven, and cook with repositioned coals for 90 minutes to 120 minutes. Check for moisture content every 15 to 20 minutes. If there is not a soupy layer of liquid covering the beans, add water, a little at a time, and stir to maintain the moisture content... Meatloaf

1 1/2 pounds ground beef, 2 eggs, 2 tablespoons of taco powder, 1 1/2 teaspoons salt, 1 teaspoon of black pepper, 2 slices of American cheese, 2 tablespoons green pepper, 2 tablespoon of onions or small onion, 1 small can tomato sauce, 1/4 cup of minute oats, 2 slice of bacon.

Directions: Combine all of ingredients except 1/2 of tomato sauce and bacon to put on top of meatloaf. Cook at 350 degrees for 45 minutes... Louise York, Success Chapter #87

Old Settler Baked Beans

1 can red kidney beans, 1 can lima beans, 1 teaspoon chili seasoning, 1 can pork & beans, salt and pepper to taste, 1 pound hamburger, 3/4 pound bacon, 1 medium onion chopped, 1 cup brown sugar, 1/4 cup barbeque sauce, 4 tablespoon molasses.

Directions: Drain liquid from beans. Brown and drain hamburger. Cut bacon into 1 inch pieces and fry. Pour bacon and grease into beans. Add remaining ingredients. Cook in Crock-pot on low for 6 hours... Bessie Peterson, Success Chapter #87

Party Ham Casserole

3 cup diced, cooked ham, 1 can green beans, 3 medium Potatoes, boiled, cooled, and sliced, 1 1/2 cup plain packaged stuffing, or bread crumbs.

Directions: Mix this in a large, greased casserole dish.

Then make White Sauce as follows: 1/4 cup butter, 1/4 cup flour, 2 cup milk, 1 cup grated cheese, 1/4 cup slivered almonds, 2 Tablespoons of shortening.

Directions: Mix white sauce in med. Saucepan, over medium heat. When thickened, pour evenly over casserole. Bake at 350, uncovered, for 30 minutes... Marla Driver, Success Chapter #87

Potatoes Hamburger Casserole

1-2 pounds ground beef, 2 large Potatoes, 1-2 small Onions sliced, grated American Cheese, salt and pepper.

Directions: Cook ground beef, dry the fat off. Layer the hamburger in the baking dish, then the onions, potatoes. Sprinkle with cheese. Cover with foil. Bake at 325 or 350 degrees until done. Serve with garlic bread.... Claudette Miller, Success Chapter #87.

Pot Roast Pork

4 to 5 pounds loin pork roast, salt and pepper to taste, 1 clove garlic, 2 medium onions sliced, 2 bay leaves, 1 whole clove, 1/2 cup hot water.

Directions: In a crock-pot add slice onions, pork and the rest ingredients. Cook on low 10 hours. Then on high for 5-6 hours. Claudette Miller, Success Chapter #87.

Sloppy Joes for around 50

6 pounds lean ground beef, 1 1/2 cups chopped onion, 1 1/2 cups chopped green bell pepper, 2 tablespoons mustard, 4 1/2 cup ketchup, 1/4 cup and 2 tablespoons brown sugar, 1 tablespoon garlic powder, salt and pepper to taste, Hamburger buns.

Directions: In a skillet over medium heat, brown beef, onion and green pepper; drain off fat. Stir in the rest of the ingredients in meat mixture. Reduce heat and simmer for about 30 minutes. The longer it simmers the better it taste. Ladle on a bun.... Kelly Hill, Success Chapter #87. 

Taco Salad Casserole

1 pound ground beef, 1 small onion (Chopped), 1 3/4 cup salsa (mild or medium), 1 package taco seasoning mix, 1 16 ounce can refried beans, about 6 ounces or so of crushed tortilla chips, 1 small can sliced black olives, 4 to 6 ounces shredded taco blend cheese, chopped tomatoes, taco sauce, 1 cup sour cream (optional).

Directions: Cook beef and onion until beef is browned. Drain fat. Stir in salsa and seasoning mix. Bring to boil. Reduce heat and simmer 2-3 minutes. Stir in beans: set aside. Line the bottom of a 9x13 dish or pan with crushed chips. Layer as follow over chips, meat mixture, lettuce, olives, tomatoes, shredded cheese. Tater Tots Casserole

1 pound ground beef, 1 medium onion (chopped), 1 can mushroom soup, 6 slices American cheese, 1 Package tater tots.

Directions: Brown beef and onion; stir in soup. Place in casserole dish; top with cheese and spread tater tots over top. Bake in medium oven until browned... Bessie Peterson, Success Chapter #87

Quick Sandwich

1- pound of beef, 2- Tablespoons of finely chopped onions (or onion powder), 1/4 crushed garlic (or garlic powder), 1- can Chicken Gumbo Soup (drained), 1- Tablespoon Ketchup, 1- Teaspoon Mustard, salt and pepper to taste.

Directions: Brown beef, onions, garlic until beef is brown. Drain any excess fat. Add drained Chicken Gumbo Soup, Ketchup, Mustard, salt and pepper. Let it simmer for awhile so the flavor merge. Put on buns. Optional add cheese, tomatoes and lettuce.... Patricia Jenks, Success Chapter #87
